Easy shrimp pie

A quick and easy meal, old family favorite and you can improvise with ingredients.
I dont measure when I cook…but will “guesstamate” Here goes…oh yeah…pics included…

Ritz and saltine crackers
butter
cheese(about a cup to a cup and a half,your choice, amount and type)
shrimp (at least a pound)
3 eggs
1 can of canned milk
salt and pepper to taste
2 tablespoons corn starch

-lightly saute shrimp in butter (or olive oil)
-soften butter and grease bottom of casserole dish
-crumble ritz and saltine crackers in bottom to form a layer on butter
-top with shrimp and cheese (and any other toppings you want to add)
-then another layer of crackers topped by cheese
=beat eggs and milk togther and add 2 tablespoons corn starch into liquid
-pour over ingredients in dish and dot with small amount of butter

-bake at 350 until bubbly and brown on top. take out and allow to sit a few minutes before serving

**ok…so I add scallions, onions, bell pepper, mushrooms,finelly chopped brocolli crowns…what ever is in the refrigerator.
**have used seasoned croutons in with crackers…and you can use just ritz if you want to.

Sounds a bit strange but it is really good!

Penny told me how to make her shrimp pie week before last, and I was supposed to take pics as I went along and post the following morning. Well, I got busy and forgot.:frowning_face: Penny still kept telling me to post the recipe, so I told her I’d do so and call the recipe “Pushy Penny Pie” in her honor.:wink: Daggone it, I still forgot to post! :roll_eyes: This Christmas decorating, shopping, baking, etc. AND working is taking a toll on me, for sure!:face_with_head_bandage:

Anyway, here’s a picture of a slice of “Pushy Penny Pie” taken while chatting with her on the phone the day after I made it!

One thing I did a bit differently is that I sprinkled fresh grated nutmeg and some white pepper over the shrimp that I boiled instead of sauteing - didn’t add any veggies, either.

I’ll share something about my dear friend Penny who happens to be as good of a cook as she is a fisherwoman is that when we first became buddies, I kept asking her to send me all her recipes for this and that and that and this… She looked at me and smiled and said, “Andi, honey, we have the rest of our lives to share our recipes.” That made me smile.:smiley:
