Easy Stromboli

ok…time to raid the refrigerator for dinner…heres what I came up with…fast and easy…

What you will need…

2-3 boneless skinless chicken breasts (cubed)

6oz jar marinated artichokes/drained and chopped

1-10 oz package frozen spinach leaves,thawed drained and squeezed dry

4 oz package feta cheese of your choice…crumbled

1 cup finely shredded Italian cheese blend

2 tsp lemon juice

1 egg white lightly beaten

1 package refrigerated french bread dough( can also use pizza dough)

Wash chicken breasts and cube…cook in pan lightly sprayed until done.

Preheat oven to 350 degrees.
Spray a cooking sheet with spray of choice
In large bowl combine all ingredients except egg white.
Roll out dough on lightly floured surface
Spoon chicken mixture onto dough surface to 1/2 inch of edges.
Start on one long side and roll up jelly roll style/pinching edges.
Place dough roll on sheet and brush with egg white
( I also lightly sprinkled with Parmesan cheese)

Bake for 30-35 minutes until lightly brown. remove and let stand for a few minutes before slicing.

Had some spinach/cheese left over so made a quick spinach/tomato quiche with what was left…just in case he didnt like the Stromboli because he doesnt really care for feta cheese…but didnt seem to notice it

Served with salad leaf mix with craisins/walnuts and a raspberry vinaigrette dsg

no…but if i make the next one a little longer and bake it harder you could use it as a weight belt :slight_smile:
