Happily back on night shift now after three months of 12hr day shifts that left me very little time to cook often…yes I really did miss “experimenting” by forcing new recipes on Donnie:smiley:…so tried a couple new ones today. First up…
Easy Poppy Seed Chicken Salad
what you will need…
2 cups cooked chicken
(a rotiseri from the deli or the pre-cooked pkg in meat dept work well if you dont feel like cooking some)
1/2 cup each halved black and red seedless grapes(can use green also)
1/2 cup toasted or roasted pecans/walnuts or combination
1/4 cup poppy seed salad dressing (I used the kraft creamy)
sprinkle little celery seed (optional)
(could also add some broccoli florets)
all you do is take your cut up cooked chicken and add in the other ingredients…toss gently with the dressing…serve with crakers/pita chips or as I did…some hard rolls with honey butter…
now for dessert…
know that healthy salad you just ate…well there was a reason for that:wink:
Key lime pound cake
what you will need
1 cup butter…softened
1/2 cup shortening
3 cups sugar
6 large eggs
3 cups all purpose flour
1/2 teaspoon baking powder
1/8 teaspoon salt
1 cup milk
1 teaspoon vannilla extract
1 teaspoon lime zest
1/4 cup fresh squeezed lime juice
stir together flour/salt and baking soda in a bowl and set aside
preheat oven to 325.
Grease and flour a 10" tube pan
beat butter and shortening at a medium speed until creamy
Gradually add in sugar, beating at medium speed until light and fluffy
Add in eggs…One at a time beating after each until blended
slowly add in flour mixture and alternate with milk as you do…starting and ending with the flour ////1/3 of the flour…1/2 of the milk…1/3 of the flour…1/2 of the milk…then the last of the flour.
stir in the vanilla and lime
