Easy 'Tater Soup

Dreary day…craving some lighter “comfort” food after all the heavy holiday meals. Decided to make some potato soup. Easy recipe my mom and dad have always used. Had a ham in the refrigerator and some ham juice so use that as a base. Can also use finely chopped bacon or butts meat…even chicken broth if thats what you like…but heres what I did

Chopped up some ham into little pieces…
Took out some ham juice I had frozen into cubes after baking ham.(anytime I bake a ham or chicken i pour leftover juice/broth into small plastic container or trays for seasoning juice in veggies,soups and rice)

Chopped two mild onions very fine and sauteed in a little of the ham juice until clear…added in ham pieces for a nother few minutes. Cut and cubed some potato’s and added in for a few minutes along with some fresh chopped flat leaf parsley (can also use a little celery if you want)…added in about 4 cups water, salt and pepper to taste…brought to a boil covered and reduced to low simmer until potato’s were done. I also added 4 tablespoons of instant potato’s as a thickener when almost done.

Made some corn bread too’

1 box jiffy corn muffin mix
1 egg
milk
grated cheddar cheese
pat of butter
And I added in 1/3 cup of this pepper relish for a little kick

finished product…fast and easy lunch anyone can make!

Corn bread is ok… but that soup needs some home made bread to dip in it!

Miss Penny, I’m a REDNECK and the first thing I saw in the pics was the “grease drops” on top of the soup!!! I cuold dip any kinda bread,muffin or roll in it an be happy as a Lark. GReat job as always.

:smiley: lol…well thank you…i started to make that again today but donnie wanted the taco soup so made that instead:smiley:…I froze tha big ham bone in the pic and will cook some limas down with it wed. . a pot of rice and have pork chops to go alongside…now thats a redneck country boy dinnner:wink:…
