Tear off a piece of aluminum foil large enough to wrap a filet in. Center the filet in the foil and season with butter or EVOO, lemon juice and salt and pepper. Place your favorite veggies on top of the fish; I like slices of oninon, tomatoe, bell pepper, and zucchini. Wrap the package up in the foil. Bake in a preheated 400 degree oven for 20 minutes.

Try this for a mild fish like ARS. pat fish dry and season with sea salt, fresh cracked pepper, and maybe just a light sprinkling of chili powder or sweet smoked paprika for color. Pat seasonings in. Now VERY LIGHTLY dust with flour. Heat a skillet reasonably hot and add enough butter to saute the fish. Brown lightly on one side, then turn and brown the other side. Put pan and all in a 374degree oven until just done.
Remove pan from oven, take fish out and set aside. Now put skillet on a hot burner and add a couple of sprigs of fresh thyme. Add a good dry white wine and reduce by half. Add more butter and swirl to melt and incorporate. The sauce should become velvety and thick. When finished add a small squeeze of lemon, taste for seasoning and adjust it accordingly, remove the thyme sprigs. Add some chopped parsley. Plate fish and spoon some of the butter sauce over fish. I have always enjoyed this style of cooking for mild firm white fish such as snapper or grouper. It works well for big flounder fillets too.

pre heat broiler
coat fish skin with a thin coat of mayo, lightly season with your choice of fresh herbs or spice (lemon zest and fresh crushed black pepper and a pinch of sea salt works for me)add 2-3 capers per skin on fillet. broil until flakey, should only be a few minutes depending on thickness of fillets. fast, simple, and delicious
also works well with whiting, or anything from the drum family. not so well with macks, blues, or more oily fish.
