Eating Tiger Shark

Got some pics on bft/H/H site of a Tiger caught & the guys gave me some treats. Any thoughts on food value??

Sharks have a primitive kidney system which results in high proportions of nitrogen compounds in there blood (they pee through their skin). When these break down the first sign is the smell of ammonia. To prevent this break down the fish must be well iced immediately. If an ammonia smell is strong do not eat the fish. Trust me you can taste it and it is terrible. If it is mild or not present at all you can soak the meat in milk for a few hours rinse and grill, broil, or roast. The most common shark eaten is Mako. Second is Dogfish. The Dogfish if handled well are good because they are smaller and very mild. I hope this is helpful.

Shark should be “bled” as soon as it is caught to eliminate the blood/urine problem. Bonnet head sharks eat pretty good, not sure about the Tiger shark.

Long Enuff

Go one step farther and gut the fish and pack with ice do not cut tail or the head off for measuring in case your stopped by DNR. It does make a difference in the quality of the meat. Not sure about eating a tiger shark though. Mako, blacktips, bonnetheads, and scallops are good eating.

Makos are one of the few sharks that have kidneys and don’t ‘pee’ thru thier skin, which makes them good table fare,as well as most small, under 3 ft or so sharks. Once they get bigger, most sharks are just about useless as table fare due to the ammonia present in meat. It will drive you out of kitchen if you try to cook a steak from a larger shark.

doublen, i really like to eat shark but the only ones I’ll eat are the ones I catch, gut, wash and ice within a few minutes. bonnetheads and sharpnose are great. let me know about the tiger.

There was no ammonia smell whatsoever…good sign. Will let ya know how it turns out. I keep some of those Sharpnose & Bonnetheads as well but gut, rinse & throw it on ice while it is still flippin around.
