Exquisite Dolphin

As every one does, we caught numerous dolphin this summer. With so much tasty meat, i decided to experiment with some. I found that peanut dolphin, are delicious when whole fried (head, tails and fins cut off)in a pan with olive or any kind of oil. Or, scoring the whole filet and sprinkled with cajun seasoning, grilling or pan frying it, and then topping it off with a lemon zest butter sauce. And for larger dolphin when the meat may be somewhat tougher, cutting the filets into chunks and blackening them in a pan with olive oil (just a little), or just sauteed in butter is a great appetizer for a party and excellent for fish tacos. Same can be done with snapper, and other white meat fish.
