I think they are p4p the strongest fish we have around inshore.
I target them many ways but my favorite way would be extra light tackle in creeks and the back waters.
Fresh water, I love brim fishing over bass but as far as targeting for the meat it would have to be Walleye . Then I can’t rule out setting bush lines and working a night with them for some Catfish.
Inshore fishing a live shrimp on a jig head using ultra light tackle for trout. fun to catch and delicious to eat. But then, I still can’t say that is my favorite! Hooking and bringing in a nice Flounder on deck sure brings a smile to my face.
Offshore, trolling for Dolphin for the shear number you can keep to offset cost vs meat brought home with the plus of snagging a wahoo or perhaps a maco?!.
Offshore bottom fishing? I can’t give you an absolute favorite? at one time I’d have said Red Snapper now with all the regs maybe some large BSB, Triggers, or Grouper… but then I’d have to re-check regs on those now a days. That said fighting a big reef donkey, or making a night trip and hooking into a couple of Swordfish.
On the Spot tail… Yes they are nice, but the abundancy and ease of catching them kind of takes the thrill out of it.

My favorite freshwater fish has always been Smallmouth Bass, and tidal fish Striped Bass. First bass I ever caught was a SM bass, in a tiny stream on a Rebel Humpback crankbait. I was about 13 or 14 years old. I don’t recall how old I was when I caught my first Striper, but was also at a young age. That being from all the years I lived in MD and had more access to these species. For eating, I preferred White Perch to most anything else I caught on a regular basis.
Not sure that will change, but since there’s no SM bass near me now, I may have to seek a different favorite in freshwater. I won’t count the Stripers in the lake, since they’re already a favorite species. Any have been fun to catch. Hard choices to make.
I never got to fish in “saltwater” a great deal, it was mostly brackish no matter where I fished with the exception of occasionally fishing parts of the Chesapeake like the Honga River area & vacation time to the MD, NC or SC coast. It would be hard to pick one single species. If I had to pick it would be a toss up between trout & Redfish because both are great on any type of tackle I might want to use and good table fish.
My favorite way to fish is with fly tackle regardless of the fish species and small waters hold a special place for me. Otherwise, I prefer casting lures, and especially in shallow waters with light tackle. I can really enjoy tossing topwater lures, even if the tackle gets into a bit heavier gear type.
Sheepshead. Simply because you never know how big the fish is by the bite. a 10 pounder bites the same as a little dink. plus the challenge of hooking them.
my second would be site casting for bonnetheads. I like to cruise down the Kiawah river on an early summer morning at low tide and find bonnetheads cruising the shoreline. I put a whole live blue crab on a large circle hook tied onto 4ft of fluorocarbon leader. when u find a bonnethead pitch the crab right in front of him and hang on!!
I love the look of a B-liner coming up from the bottom. Better yet, a double.

I would have to say the mud minnow, you can easy catch them year around with out a lot of work, and they are eaten by just about any thing you want to use catch. Just my two cents worth for 60 years of catching!
