Got a few trout filets that I’m going to cook up tonight. I usually soak them in an egg/seasoning mix, then roll them in flour and bread crumbs and fry them, but I want to do something a little different this evening.
What’s your favorite recipe for trout? Fried, grilled, or baked - all options are available.
Earlier this week I put 4 filets in the oven for about 7-8 mins, then waited till they cooled, and flaked them into small pieces. Then used the meat as a substitute for crab to make “trout cakes”. I just used my favorite crabcake recipe: egg, 6-7 saltines, mayo, mustard powder, old bay, pinch of suger. Turned out pretty good…
capt fritz cooked some the other year that he baked with tomatoes and something else that were some of the best i’ve ever had. you may want to PMS him about it
back in the day we would clean and scale them, then score the skin side. rub inside and out with EVOO, salt and pepper. then stuff with lots of fresh herbs, some lemon slices, and lay lemon slices across the top. bake in a regular oven for several minutes. when almost done, remove the lemon slices and turn on broil for just a minute to crisp up the skin a bit
Trout turned out great last night. Thanks for the recipe, Hopster, but I’ll have to try that one next time around - the fish were already filleted.
Here’s what I did…
-Beat two eggs and add a little olive oil (I’m not manly enough to say EVOO, yet).
-Add seasonings: salt, pepper, dash of Old Bay, and cumin (this was a new addition for me and added a wonderfully smoky flavor)
-Cut fillets into serving size pieces and soak in egg mixture.
-Toss in House Autry Seafood Breader and fry it up.
Yeah, it’s nothing fancy, but my wife (who is not an avid fish eater) complimented how good it was. I think the cumin made a big difference - the fish had a totally different flavor than it usually has.
I take melted butter, garlic, parsly, lemon juice and mix them in a bowl. turn my oven on broil with the rack set on the very top. lay my fillets skin down on a baking sheet and salt and pepper. I then baste with my butter mixture and broil for 5 minutes, pull out and baste again, and then broil for another 5 to 7 minutes.
