Talking about rabbits in the cooking section made me think this one.
I’d say Elk and quail would top my list. Then along would come the loin of a young gator out of running water, rabbit, deer (white tail, don’t care for mule) and a barbecued or hashed coon. Duck too… if prepared right and not over cooked. oh i forgot! alligator snapping turtle is good. Y’all can have all the squirrel, snake, and possum you want.

Gotta be elk, all the way. I actually don’t mind Mule Deer and love gator and quail. Hard to beat a good rabbit bog and a bubbling Dutch oven full of squirrel and dumplings in squirrel gravy. My wife would cut all of your break lines for some bacon wrapped whitetail tenderloin and will fist fight me for the last piece of gator.
In the future, where every stranger poses a potential threat, knowing the predator mindset is the only safe haven.
Tried a Canadian goose for the first time tonight. Fried in thin nuggets and red pepper. Must say it was good and I’ll no longer let them fly by without getting an air raid. My favorite would have to rabbit with hash coon coming in a close second. If done right.
Another vote for Elk from me!!! I’ll never turn my nose up at whitetail but it’s not on the same planet as Elk. By far my favorite red meat, period.
I’m with CL on frog legs. Absolutely love’em!!! Especially when they come out of flowing black water. Don’t get heavy handed on the breading though. Nice and light dusting of A1 seasoned flour and cold beer. That’s what I’m talkin’ bout!
Huge fan of rabbit perlo too and duck breast seasoned just right and grilled medium rare.

Mine would probably be young gator tail, but I’ve never tried elk. Saw one once. Wouldn’t want to drag it very far [:0]
I like good fresh frog legs too, not the farm raised grocery store frog legs. I think they raise those in the same ponds as the Thailand shrimp.
I want my frogs to come from the same water as my gator tail. Very similar flavor too. Also like quail and dove. Deer are further down my list.

Elk is as close to beef as it gets. No doubt, you wouldn’t want to drag one far. Most guide hunts don’t carry you far into the bush! Was at a ski lodge once and had one butt up to my truck and crap/rub it all on the side, bent the front fender pretty good. A local side they mark their territory like that. ??
had moose but it is a very lean, dry, and stringy meat. imo
Best eating IMHO is Elk/Moose and Pheasant. Have had several samples from friends over the years and they are really good. Seeing we don’t have any here in SC I will have to go with my Deer and Doves. You can’t beat some good ol deer cube steak with gravy and onions, breakfast deer sausage, or doves and/or deer tenderloin wrapped in bacon - marinated and grilled. I am fond of a good fish filet too - know that!!!
Definitely elk, pheasant and rabbit. We elk hunt every year in Colorado, pheasant hunt all over Kansas and Iowa and rabbit hunt on the farm. Id still rather be living in Charleston again and getting my elk and pheasant sent to me from dad though. It was 16 degrees this morning.
