In the hopes I will actually have something to clean, I am looking for a good fillet knife. I am not looking to spend a fortune but would like to get a good, quality knife. Anyone out there have one they like, know of one better than others?

I’ve been using this knife for about 3 years and love it. Rubber molded grip and and holds an extremely sharp edge with no issues of corrosion. One of the best fillet knives I have ever used. It is usually about $20 so it is a heck of a value.

i like those a lot, definitely on the high end of price for a fillet knife, but i’ve spent twice that much on other blades…dexter russel is my favorite for true work knives- this thin blade model is very flexible, about $20:

I have a Wustoff that I got from Cabela’s that is a good knife, but too flexible and ‘delicate’ for some of the bigger fish with real scales. Works great on flounder, smaller spanish and trout.
I got a Dexter Russell for Christmas because that is what all the people that I have seen cleaning the bigger fish use. I have seen it work great on larger red and black drum as well as king mackerel.
You can get one with a sheath at Bass Pro for under $30.

I have a dexter russell and cleaned a limit of sea bass with it a couple days ago and never even sharpened it. Pretty good knife for about 20 bucks.
I have Dexters 12" Scimitar for Dolphin, large grouper, snapper, Foschners 12" butcher for tuna and sword, and a Schrade that is the best triggerfish knife I have ever used. But the knife that gets the most use at home is a 7" Normark…very cheap at Walmart, sharpens easy, holds a great edge, and comes out of the box razor sharp. This knife if perfect for Redfish, trout, blackfish, pinkies, flounder, sheephead, B-liners.

The only problem with mine was after 4 years on the outside sink the handle started to rot. But the one in the kitchen is still going strong and works wonders on trimming fat off a pork loin.
Can’t beat it for the price. A rubber handled Normark will replace the outside one.
Don’t know if they still have them but a couple of years ago Bass Pro in Savannah had a cheap set in plastic case, gloves, sharpener and two fillet knives. $10.00
I know its overkill, but I have a friend who is a professional knifemaker. I use a fillet knife that he custom made for me. It has just enough flex, holds an edge forever, and isn’t the size of a machete. Before that it was a beat to heck Buck “special” that had been sharpened so many times it had become a fillet knife.

I like my Buck Special 119. Its not supposed to be a filet knife, but it works on a flounder better than any knife I’ve used( i cut from the center out), the curve at teh front of the blade is just right to filet the meat off

Best knife I’ve ever HAD. HAD for 25 years. Key word HAD, because it is missing. My neighbor offered me his that is Grandpa gave him, and it turns out its the same one. EXCELLENT knife in my opinion.
Of course, since you never catch fish, its a moot point!

Paul, I have watched you fillet a trigger fish and still can’t believe how fast it can be done. Which Schrade knife do you use for the triggers? (that may be the only offshore fish we are allowed to keep in a few weeks).
