Filleting fish

I start from the head and work down to the tail, but I don’t cut the skin from the tail, I leave the skin attached. Flip the filet over and the attached skin at the tail fin give better leverage for removing the filet off the skin.

smb, at first I thought it was going to be a spoof video. That young man came pretty close to jabbing his left had a couple of times. Could have used to take a bit more meat near the skull.

To each there own, but I do pretty much like the video claim posted.

That was me in the video, my hands were just about to fall off because of how cold it was. I was trying to get the job done and get home!

I’ve seen it done both ways. The way shown in the vid, to me, makes it a little easier to remove the skin. But it’s all good.

When I was much younger, I was a meat cutter for Winn Dixie for about 12 years. One of the first things I learned and the first thing that I always taught new meat cutters was that you NEVER cut towards yourself. This includes your hands. I couldn’t watch all of that video because it made me cringe watching that young man cut towards his hands. That’s a bunch of stitches waiting to happen. The knife that he was using seemed a little dull, also. I can promise you that you will cut yourself worse and faster with a dull knife than a sharp one. I fillet exactly like claim, from the head towards the tail, but leave it attached at the tail. This makes a good handle to hold on to while removing the skin.

Hey dude, I wasn’t trying to chop you down too bad. I just had a bad experience while self teaching myself to fillet doing just like you did. Have the scar across my left thumb to remember it by.

Try it from Head to tail and pick yourself up a mesh glove! Keep catching em!
