I think it is a lot easer to fillet a partialy frozen one than a thawed out one as they seem to get musshy! I alyways fillet all fish except trout before freezing! Trout especely get mushey when frozen in fillets!
So you threw the entire fish in the freezer uncleaned?
What shoulda been filleted as soon as possible, but partially frozen would be best always wash your fish with saltwater when cleaning being freshwater makes saltwater meat mushy!!! you can grill the mahi fillet with the skin attached put it down skin first and it should peel off quite easily when cooked partially.
