Fish Salad - Not Salad With Fish

i saw on another thread that someone mentioned a dolphin salad. here is a simple but wonderful recipe i use for making fresh fish salad. i used to do it with tuna (but not anymore now that they are extinct) i have used dolphin and its really great

cut fish into chunks (about the size that you would fry)
season with s and p and a little old bay
get your grill smoking hot and oil the grate. its very important to have your grill hot enought to get some browning. this is where a lot of the flavor comes from
grill the fish chunks until almost done and remove. they will finish cooking while off the grill.
let the fish cool and flake it.

now, in a bowl add -
real mayo (not too much, just enouh to coat)
kosher salt and fresh pepper
lemon juice
tad of old bay
fine diced sweet onion (vidalia)
cooked fish

mix lightly and thats it. it will blow you away!

i like to serve it like this:
toast a plain bagel
put a very fat ripe tomato slice on each half of the bagel
put the fish salad on top of the tomato slices
if you have to get pretty with it add some fresh chopped chives

Hoppy, I did the same with some left over grilled wahoo the other day and it was on time!
I just used Duke’s real mayo., pickle relish and coarse pepper.
There was some flavor from the grilling the night before so I kept it simple…good stuff with a fresh tomato and crisp lettuce!

I will try this in the next day or two

Have done this with sheepshead too… great stuff! I like to use some basil pesto instead of relish or pickles.
