Fish Tacos

I got some more dolphin yesterday. I am finally wanting to venture out into trying a fish taco. I have no idea where to start. I was thinking ab pan cooking the fish? Any ideas? Penny?

Cut dolphin into cubes, roll in flower, then egg ,then Panko (they give a great texture to the fish) bread crumbs. Pan fry in grape seed oil (it does not add an oily flavor like olive oil will) until golden brown ( this makes awesome dolphin fingers, too)

Shred red cabbage and mix with ranch dressing, salt, pepper, garlic powder, Goya powder and hot sauce to make a slaw for the tacos. Let this set up over night in the fridge.

Have limes, avocados and tomatoes cut up and ready.

Use soft corn tortillas.

A few cold cervezas and you are ready to go…

My $.02…

Caught several good sized sharks yesterday. Marinated the steaks overnight in Montreal Steak seasoning and Texas Pete. Grilled them and made Shark Tacos! Awesome!
