fish worth keeping/cooking?

Hello there, I’ve always been more of a catch and release type, but kids are really wanting to keep em.

What species other than reds, trout, and cobia are worth cooking etc.

I never deep fry btw. I do like the above listed, and bonnet head as well.

Flounder, dolphin, wahoo, tripletail, sheepshead, and the groupers and snappers are my favorites.

People seem to have really mixed opinions on this, but my favorite inshore fish is black drum. Genetically, they are remarkably similar to red drum, but their diet is almost exclusively shrimp and crabs.

Some people have an aversion because the big ones have worms, but I’d bet that in a blind taste test that small black drum would beat red drum.

Forgot about flounder, but I very rarely catch em.

don’t forget some of our fresh water fish. If your kids will pick around bones grilled bream/redbreast scaled, scoured, a little lemon juice and fresh dill…mmmm. if you don’t like to eat around bones do pretty much the same with some cat fish fillets. Bass scaled, scored, buttered, a little lemon, some dill, Emerald’s fish rub, wrapped in tin foil on the grill… mmmm.

how about stingrays fellas ive heard they were good

i tried stingray before and wasnt bad at all but a pain to clean. along with everything else listed i dont think i saw anyone put down sharpnose which are good grilled. most of the time when i fish off piers or in the surf ill drop a crab net or trap too that keeps my steam pot busy. baked flounder stuffed with blue crab is a favorite of people i have over…even with those that “dont like fish”

aside from “poor man’s” fish, it’s been said here- rapchizzle, sirspear, larry, sshaarda, fred and nuke got my mouth watering… josh, good call on Pogonias.

What I would really like to know is actually how bad is fried fish over grilled…???

Penn your in the medical field. When you grill or broil most people are drizzling butter or some sort of oil on them.

I’ve had some pretty greasy fried fish, but good hot oil and letting them drain a little before putting on a paper towel covered plate. Just how bad is it?

Remember when they said coffee etc was bad for us!

agreed- hot veggie oil and some buttermilk-soaked bonnethead chunks make some of the best tacos this side of baja.

Sharpnose is not bad, but better if you soak them in lemon juice or milk for an hour or so before grillin’. Takes away some of the after taste.

when i grilled sharpnose i cut off all red meat and yes soaked it in lemon juice a while then doused it with old bay and lemon pepper. didnt seem too much diferent than bonnethead when i did it that way and nobody else at the table complained either.

If pan fried fresh (deep frying not required), we like bluefish and pompano. Use good and hot olive oil and you are eating downright healthy. We also enjoy FRESH (only fresh) smoked or grilled mullet and mullet stew. Spot, pinfish, and sailors choice are small but tasty also.

To me, no, not unless I’m really hungry :smiley:It makes a good smoked fish dip though. It’s strong, fishy, oily and way down on my list of good eating, but I’m sure many will disagree with that. No accounting for taste. I don’t eat sharks either. Would rather eat a mullet.
