What is the best way to deep fry blacktip shark?

Some folks say cubed. I like 1/4" medallions. Definitely use a marinade or brine (or a good soak in milk). Too many methods to list here.

For a beer batter I use Bisquick thinned out well with Guinness and adding ground sea salt, black pepper, garlic powder, and celery powder to the dry mix.
