Fried King Mack

Prep: Cut king into 1 inch steaks. Using a sharp knife cut 4 “medallions” of pure meat out of each of the 4 quadrants per steak (1st cut in each quadrant, go along the skin side 1st…makes it easier). The end result resembles the size and shape of large scallops.

Frying: Heat grease in deep fryer or cast iron skillet. Bread or batter fish and cook until done. Doesn’t take long.

Homemade Tarter Sauce: 1/2 cup mayo, 3 tablespoons sweet relish, 1 tablespoon lemon juice. Mix and serve.

Homemade Cocktail Sauce: add extra hot horse raddish to regular ketchup. Careful a small amount goes a long, long way! Add as much as you like starting with a very small amount. Mix and serve.
