I was just given a “gator loin” from a local taxidermist. Any ideas? Its like a fish fillet maybe 3/4 in thick.
You can take some of it and chop into 1" squares, coat it in some poultry mix like House Autry, it’ll fry up great. My cousin made “chops” out of the tail and pan seared/fried them like pork chops, they were great.
