I use this recipe for my chicken whether roasted or smoked on the grill. It’s also good on pork.
5 Tbl kosher salt
5 Tbl sugar (sub honey if you like)
3 Tbl yellow curry powder (optional, but recommended)
3 Qts water
1 whole chicken (cut up, or not)
Combine first 3 ingredients with one quart water in a pot. Bring to boil. Add 2 quarts cold water. Add chicken or pork and refrigerate for at least 12 hours, no more than about 40 hours. Remove from brine and let sit uncovered to dry for about 3 hours before cooking.
