Greek wahoo...

took some thick wahoo steaks sprinkled with salt, pepper, evoo, lemon juice, finely chopped garlic, and greek seasoning (I used Cavender’s with no salt added); then grill the steaks to slightly charred, juicy perfection.

Made my own tzatziki sauce with 1 cup greek style yogurt, 2 cloves very finely chopped garlic, 1 peeled and seeded cucumber grated, juice of a small lemon, fresh dill to taste, fresh mint to taste, salt and pepper.

also made my own version of greek potatoes and a salad made with fresh rocket arugula and mixed greens, toasted chopped walnuts, blue cheese crumbles, grapes, and a rasberry walnut vinagrette.

It was the heat.

i dont have good luck cooking thick wahoo steaks. i like my wahoo right at “done”. not rare and not dry

I was scared of drying them out as well, but fortunatley I got it right this time. The tzatziki helps if you overcook a little. Also works well baked (less risk of drying out).

hate to sound like a rookie…but what is “evoo”? I keep seing it and it sounds like somehting important to check out…thanks
