I wanted to do something a little different with the spadefish we have been catching. These were grilled in an aluminum foil pan, rubbed with EVOO, seasoned with lemon pepper, added slices of lemon, vidalia onion, home grown tomatoes, and a little Greek Seasoning. Side dishes were steamed red potatoes, grilled yellow squash and peach salsa. The peach salsa was intended for grouper, but worked very well on the spade fish.
