Anybody got any recipes for cooking bonnetheads or atlantic sharpnose?

When we catch a shark…we immediately gut and belled it…but make sure you leave the head/ tail intact in case you are checked by DNR before you get home…and check your regs on length required. Skin the shark and cut into steaks and "nuggets…or large scallop size pieces. The steaks are really good on the grill…there is no fat in shark so we cook it for the first few minutes on the hottest part…then move to a lower temperature. Use fresh citrus juices, herbs,lemon,garlic or ginger on it for added flavor. Soaking in Italian dressing with a little citrus juice too is a good marinade, You can also brush with mayo and sprinkle some herbs on it or cut into small chucks and make kabobs. I like mine dredged in bested egg…shake in a ziplock bag of s seafood breaker…I like house Autry or lakeside or zatarans seafood breader…salt and pepper to taste and deep fry…again…you can also marinade for added taste in Italian dressing or a citrus marinade… I love shark meat…call me strange…but I do… :smiley:

Grilled Shark
Ingredients:
6 shark steaks
1/2 cup soy sauce
1/4 cup ketchup
1/2 cup orange juice
1/4 cup chopped fresh parsley
2 tablespoon lemon juice
2 cloves garlic, minced
1/3 tablespoon ground pepper
cup olive oil
Preparation:
Combine soy sauce, orange juice, ketchup, chopped parsley, lemon juice, pepper, olive oil, and minced garlic. Place fish in a shallow baking dish and pour marinade over them. Cover and marinate in refrigerator for 2 hours. Remove fish from marinade. Grill fish over hot coals 6 minutes on each side or until fish flakes easily when tested with a fork.

Here’s another couple good one s I’ve used
Shark Teriyaki

Marinate 6 hours. Serves 4.
4 Shark Steaks or Fillets
1/4 cup sesame oil
1/4 cup soy sauce
1/4 cup honey
2 Tbsp. cider vinegar
1 clove garlic minced
1 Tbsp. grated fresh ginger
1 small bunch chives or scallions
Rinse and pat Steaks dry.
Put all other ingredients in blender and mix well. Marinate 4 to 6 hours.
Grill for 15- 20 minutes, turning and basting with sauce. Until done

Tipsy Shark Steaks

2 lbs. skinless Shark Steaks or Fillets
2/3 cup beer
1/3 cup cooking oil
1 tsp. prepared mustard
1 tsp. salt
1/4 tsp. garlic powder
1/4 tsp. pepper
1/2 tsp. paprika
2 Tbsp. butter or margarine
4 cups sliced onions
1 cup dairy sour cream, heated
1/2 tsp. horseradish
Place meat in shallow dish.
Combine beer, oil, mustard, salt, garlic powder, and pepper.
Add fish; cover and marinate at least 30 minutes in refrigerator.
Remove fish from marinade and broil in oven 4 inches from heat for 8 to 10 minutes or until fish flakes easily with fork.i… or can grill
In a saucepan, melt margarine and blend in paprika. Add onions and saute until tender but not brown. Combine warm sour cream and horseradish. To serve, top each fish steak with onions and a spoonful of sour cream mixture.

Anyone who will eat fish from our harbor…ESP. Around plum island probably won’t bat a eye at a shark.lol. I know I would pick the shark rather than the harbor fish…!

looks like penfishn covered how to clean them, but what i do for shark steak is rinse them off good and cut off all red meat. douse some lemon juice on the pieces and sprinkle with old bay and or lemon pepper. the combination of the 2 i learned is really good! ill then rub a bit of olive oil on them and toss em on the grill, but dont overcook them. ive never had any complaints from people i served shark to. another simple method i do is beer batter using maseca (corn flour found in mexican food section) and beer of choice, then dip in cocout and deep fry.

I use the same recipe for sharks that retiredbc72 uses for skate:smiley:
