hog snapper?

finally checked out sellsfish and never tried it so bought a hogfish im gonna cook in a few days. its scaled/gutted whole and i plan on grilling it but whats the best seasoning to go with? im leaning towards either old bay or making a blackening spice to go on it but as always open to suggestions from those that make it regularly.

Hogfish is very good eating fish! I’ve always either fried it or slapped it in a pan with a bit of butter, garlic and onions, then sprinkled salt/pepper/oldbay mix on it and covered it till done.

he said grill it whole with some lemon juice, butter, seasoning, … but of course wondering what everybody else thinks is good. so far doesnt sound like theres much of a wrong way though.

I wouldn’t season it too much. Delicate fish that tastes pretty amazing on it’s own with just salt and pepper.

I have used Phin’s method for Hogfish and it is awesome. That fish is among the best IMO.

I got this method for hog fish when I lived down on Little Torch Key.

Filet out the fish
Sprinkel with just a little salt & pepper
Dredge in beaten eggs
Roll in UNSEASONED bread crumbs
Put some butter in the big skillet with just a little olive oil
Sautee about 3 minutes on each side
Squeeze key lime juice on each side as you cook it

This is so good you will expect the DEA to bust down your door!

ended up tossing it in the oven on a rack lightly seasoned with a bit of butter/lemon juice brushed over it. the northerner in me still craves the lake yellow perch and walleye ive been missing 2+ years but hogfish is definately towards the top of my list now!

When I was in North Dakota a small mom and pop’s place had all you could eat Walleye for $10.99 when the owner had it. Only complaint was no sweet tea! Other than Wahoo or Mako, Walleye is my favorite fish. Never had any Hog Snapper, I’ll have to make it a point to get some.

between fresh lake walleye and yellow perch those 2 are my favorites, however hogfish definately took the crown for the best fish ive tried in sc. wahoo, shark, grouper, and mahi mahi are also high up in the list.

Yes hogfish is one of the best eating fish in the ocean. But why do people call them hog snapper when they are not in the snapper family. Growing up we just called them hogfish.

Most people probably dont want to eat a wrasse because they have no idea what that is. So, I think it is probably marketing thing to associate hogfish with snapper. No matter what you call it, it is delicious.

Not to hijack the thread…hogfish is delish. Walleye is great also. I have wondered why nobody farms it like catfish.
