3 tablespoons reduced sodium soy sauce( but can use regular)
2 tablespoons rice vinegar
2 tablespoons honey
2 tablespoons chopped ginger root
2 teaspoons sesame oil
1.5 lbs shrimp (can also use scallops or combination of both)
angel hair pasta prepared as box directs
2 scallions thinly sliced
2 tablespoons toasted sesame seeds
(I used shrimp and a small pack of tiny bay scallops I had in freezer)
In large bowl whisk together the honey, soy sauce ,rice vinegar, sesame oil and chopped ginger. add in shrimp/scallops and place in covered bowl in the refrigerator for 30 minutes.
heat a large nonstick skillet over medium high heat…add shrimp/scallop leaving marinade in bowl.(I whisk in 1 teaspoon corn starch as thickener)
Cook for aproximately 3 minutes on each side and set aside on plate. pour marinade into same skillet and bring to boil for about a minute. return seafood to marinade and toss to coat.
drizzle sauce over cooked pasta and add top with shrimp, scallions and toasted sesame seeds
Quick and easy meal…I doubled the recipe in picture shown.
side dishs…stir fried veggies(shown) or garlic string beans.
(garlic string beans----> large pot of slightly salted water to boil…add in 1 pound trimmed fresh green beens…cook 4 minutes until tender and drain. in same pot add 2 tablespoons olive oil and 3 cloves sliced garlic over medium high heat…cook 1 minute then add in green beans and toss to coat…)
Quick easy meal…
