Had a great day on the ledge today. Started off catching 10 red snapper and finally had to move to put some meat in the box. Put the biggest gag ever on my boat today. Gonna put it on some scales in the morning to get a weight. what yall think ?

I was going to say 35 before I got to the weight at the bottom. Thats a really nice fish. Those big ones are real chewy. I was told by someone that should know to gut them, and keep them on ice for 3/4 days before filleting them. Kinda like aging red meat. Can anyone confirm this…?

Not true…we cut and sell plenty of 30 lb plus blacks and gags all the time with no complaints from chefs. larger fish have a higher fat content, making them moister when cooked. Don’t forget the cheeks and collars from that fish, or bring it by my store and we will get all the good off it for you.

I was going to put 35# on him. The charcoal belly is a dead giveaway that he is > 30#. Nice fish. Also, when they have a charcoal belly like that there is > 90% chance that it is a male.
