I cook until the texture and touch is right, like you said.

Have to cook them on low heat, or the skin will burn. I have coated them in olive oil before instead of using butter, but the olive oil likes to run off and flame up inside there. Olive oil works good in an oven though.

I think my grill temp is between 250 and 300- haven’t ever paid the therm. much attention- just put the gas on low, and I cook for about 10 minutes.

When I cook them in the oven I do 350 degrees with the fish in a pan, and I broil for about 2 minutes right before I take them out so the meat crisps up some. If I use a broiler pan, I cook on lower temp.
