when you cook you some big ol’ lima beans…fine chop you up some sweet onion…maybe a large one…one tablespoon vinegar, salt and pepper and mustard…kind out of jar you put on a sandwich…mix together and eat with those beans…can add a little relish if you want…believe me…its delicous!
easy ham and tomato quiche
Ingredients:
? 1 9-inch pie crust, unbaked
?6 large eggs
?1 cup half-and-half
?1/4 teaspoon dried thyme
?1/4 teaspoon dried parsley
?1/2 teaspoon salt
?1/8 teaspoon black pepper
? dash nutmeg
?1/2 cup shredded Cheddar or Swiss cheese
?1/2 cup chopped tomatoes
?1/4 cup chopped onion
?1/4 cup chopped ham
Preheat oven to 400? F.
Pierce unbaked pie crust several times with fork; set aside. In a mixing bowl, whisk together eggs, half-and-half, and seasonings. Sprinkle cheese, vegetables, and ham over unfilled pie crust. Pour in egg mixture. Bake at 400? for 45 to 60 minutes, or until nicely browned.

Ingredients:
?6 ounces rotini
?1 tablespoon vegetable oil or butter
?1 cup finely chopped celery
?1 pound ham, diced
?2 small cloves garlic, minced
?1 bunch (about 8) green onions, sliced
?2 tablespoons butter
?2 tablespoons flour
?1 1/2 cups milk, low fat is fine
?6 ounces shredded cheese, blend or Cheddar
?1/2 teaspoon salt, or to taste
?1/8 teaspoon freshly ground black pepper
?2/3 cup shredded Parmesan cheese, divided (or about 1/3 cup grated Parmesan cheese)
Preparation:
Preheat oven to 350?. Butter a 2-quart casserole.
Cook rotini in boiling salted water following package directions. Drain, rinse, and set aside.
In a large skillet, heat oil over medium heat. Add the celery and cook, stirring occasionally, for about 5 minutes. Add the ham and cook for 5 to 10 minutes longer, until ham is lightly browned and celery is tender. Add garlic and green onions and cook for 1 minute longer. Remove from the heat and set aside.

My lady can’t eat pork due to a health issue. If I didn’t love her so much she’d be on the curb…
As a result, pork is relatively limited in my diet, or at least when we eat together.
