we wanted breakfast so i went through the fridge and pulled out leftover stuff and got busy -
a sweet corn and stone crab meat frittata
ingredients in the order they were added -
a screwdriver, then
sliced red onion and diced bell pepper
diced sweet bananna pepper
sweet corn that had been blanched and shaved from the cob
crab claw meat
5 eggs mixed with chopped cilantro
some leftover queso dip from last night
popped it in a convection oven @-350 for 10 mins or so
everything was lightly sauteed. then i removed the pan from the burner and let it cook slightly. added the egg and cilantro mixture and mixed it in to incorporate, then popped it in the oven
hey hoppy; what was the screwdriver for? i figure it must be to maybe tighten up your nuts. they seem to be getting awfully loose and shrinking since the GF and this cooking site. LOL LOL LOL
by the way. did you see that ft jackson is looking for a superintendent? wonder what happened to jimmy w.
i heard that jimmy was checking out. something about his wife coming into a bunch of $$ and he didnt have to work anymore. for whatever reason they are enamored with myrtle beach and are planning on moving there. a couple of local supts have called to ask me about it
the baked omelet looks good hoppy…i don’t think you outdid your dinner from last week, but well done nonetheless. try a little sliced potato next time for a frittata.
