But I did make a pretty good one Sunday afternoon. Took on sale chicken thighs from the pig. Deboned them and pounded them flat. Good coat of Greek seasoning although I thought Old Bay would have been better.(the wife says I put old Bay on too much).Put 3 jalapeno slices in the middlealong with a slice of velveeta because that’s what I had in the fridge. I think portabellos and sweet pepers would be better. Folded them over, wrapped in bacon and secured with toothpicks. Make sure to secure the ends or the cheese will run out. Marinate with teryaki and hoey and then grill while basting with the sauce. Fantastic! I find the chicken thigh to be the best part but the bird. Hope someone may tweak this and give some other interesting ideas. It was really good and maybe better the next day after sitting in the fridge.
mmmmmmmm…WE NEED PICS!!! have taken chicken breasts before and "pocketed them, marinated in greek dsg…then put feta , sun dried tomatos and black olives in it and skewered it shut…then grill…those are good too…I too like the thighs though…
