Impact of Temperature on Fish Bite

With temperatures (air and water) on the rise, can someone tell me how this will impact fishing (reds, trout and flounder)? I have heard that the trout bite really falls off after water temp hits 80 or just above. Does this mean that the trout bite is over until the fall? I am coming down from Charlotte next week and just trying to learn what to expect. All input appreciated.

Are we assuming the temps are the same at the surface and at say 20 feet deep .
Depth and speed of the lure or bait would be a better question to ask in my opinion .

Flounder fishing is only getting better. Trout bite best in the dark or early morning/late evening.
