Island Chunks

-1 inch cubes of snapper, grouper, mahi, etc
-Cajun or preferred seasoning (spice adds to flavor)
-Olive Oil
-Mango Juice
-Lemon and Lime juice

Take filets and cut into chunks. Season, then lightly drizzle with mango juice. Take your pan and add enough olive oil to lightly coat the entire pan. Heat the oil to about medium high. Add fish into pan and stir quickly. Lightly turn until fish is slightly opaque. Cook to desired temperature, then turn off heat. Squeeze lemon and lime juice over fish. Great for appetizers, fish tacos or even entrees. Tuna is excellent for this, either cooked whole or chunked.
