Believe it or not, they are very good eating. I’ve tried it. You need tin snips to get through their armor but underneath are two very clean white boneless tenderloin-looking fillets. The texture takes a little getting used to when cooked. A little rubbery but the flavor is quite good.

I couldn’t tell you how many I’ve threw back or given to bank fishermen. I’ll eat most anything, but never tried a gar. They usually have a funky smell IMO, kind of reminds me of a cuda.
