My buddy threw me a handful of tags and said blast em. He has QAP tags or whatever they are because he has so many. Long story short, one hog and 3 does in 45 minutes. I already shot a buck there so I was only there to shoot does. 6 bucks walked across while I was shooting does. None were very big or even tempting today.

I just got done grinding up some venison. 34 lbs with a little beef fat added. got 10 lbs of super clean cuts for the cuber too.

Skeeter you need a walk-in cooler/freezer, or do you already have one?
What kind of grinder do you use? I have been thinking about getting my own grinder. Paying to get deer processed is getting old. I know a really good grinder is expensive…if I get one, I want one that will last years worry free. I think a cuber is an attachement to the grinder as well…is that correct?

I’ve got a Hobart grinder(Model 4312) and cuber(Steakmaster Model 401). Have the sausage tubes that attach to grinder as well for stuffing those casings. Works great.
FYI, Paid $800 for the grinder but that included one of those big commercial Hobart band saws that I sold for $500. Paid $450 for the cuber. This was years ago. Also, the grinder originally comes with a small round meat tray that I replaced with the larger rectangular one. Holds a lot more.

Skeeter, if you do get a grinder do your sausage half hog and deer. good stuff! If you don’t get a wild hog, buy a few Boston butts and use those.
and cut those Nutz out right after you shoot him! As long as your not near a salt marsh, I prefer wild hog over domestic. If you can pick and choose take a sow.
As many as your going through, some home butchering if you have the ability (place) to do it would probably benefit you. Even with just basic processing, more than two or three deer starts getting expensive.

Fred offered some great advice^^^. I normally just pickup some pork fat from grocery store. Bi-Lo in Hampton gave me some.
When grinding sausage you need to have 30% fat.

My wife’s nephew works at the slaughter house in Kingstree, so I am going to find out from him if he can get regular old pork fat for cheap or free. If you have a recipe for seasoning that you don’t mid sharing, I would gladly save it until later when I will need it.

I wish I could claim the spice mix as mine. I get it from someone in Thomson, Ga. I can bring you some. It is mixed to do 25lbs. Good stuff!

For all: I killed these deer with ADQP tags. There is no daily limit on properties enrolled in ADQP. Just to throw it out there because I had someone try to call me out on it, but they didn’t read all the regs…just the part they thought was right to “get me” kind of thing with my pants down. But, it will take a lot more than that to get ole Skeeter22 on some silly reg/law compliance. I read them all…very carefully.
