KingFish 11/4 --- Wahoo!

So the crew got together Sunday morning to discuss if they still wanted to push off to the ledge as previously planned when the conditions looked “do-able”… the vote was to press on even though we were now looking at 15-20 with 3-5 at 4 seconds. The ride out was wet… but manageable. Set up the spread and had the first knock down in 110’ in 10 minutes. The monster came within a few yards of spooling the TLD25 before he could be turned on full drag. When we cleared the other 4 lines all that remained where Ballyhoo heads… we got freight trained! Should have stayed in that area, but felt we needed to get as far south as possible to ensure safe passage back home.
I should have listened to our local expert and ran some different set-ups… Lots of short strikes and 2 knock downs that resulted in spit hooks.
It was a long, wet, windy day on the pond. Played it smart, respected the ocean, and took it slow and steady all the way in.
Thanks to the Sellsfish team for processing our monster, brought home 38lbs of steaks! The taste was unbelievable! Maybe even better than Mahi…
We did manage to put the first Wahoo in the KingFish… so it was a day well spent with friends. One to remember for sure.
The gent that landed this fish was on his 1st offshore fishing trip… Think he may be hooked…

We left charleston in a 68ft boat that day and i know that it was bumpy out there - i admire the commitment for the wahoo!! so was that first fish in 110’ the one that you landed in the photos?

Since FishnBarrels mentions wahoo recipes, I thought I’d share RussB’s FAMOUS ceviche recipes! Wahoo makes the BEST ceviche EVER! I carved some up just this past weekend. Enjoy!

Ceviche:

3/4 lime juice, 1/4 lemon juice, diced tomatoes, red onions, cilantro (fresh), garlic, marinate cubed fish in mixture till desired level of “cooked”, drain juice, add diced jalapenos, cilantro, drizzle with bit of olive oil.

Poisson Cru:

3/4 lime juice, 1/4 lemon juice, diced tomatoes, red onions. Marinate 1/2" cubed fish in lemon, lime juice, tomatoes, onions until desired level of “cooked” is achieved, usually overnight, less for more delicate fish, drain juice, add chopped papaya, mango, kiwi fruit, coconut milk.

The first one is more on the tart side (ceviche) versus the next is on the sweeter side (poisson cru, Tahitian salad) Personal favorite fish to make it with is Wahoo although lately have been making it with dolphin with great results as well.

Serve with “scoop” chips for appetizer or makes for a great topping for grilled or baked fish as well.
I will usually freeze the fresh caught fish for at least 48 hrs before making either dish, although have been known to start carving one up right off the gaff!

Really helps to have the serving bowl in a bowl of ice to keep it cold and fresh especially if making it for a party or in the heat of the summer. Grew up eating these dishes and variations of them, the “ceviche” is more South American while the “Poisson Cru” is more Polynesian.

Since eating Wahoo came up on here I would like to know if any of you make Sushi with it?

I love Sushi (especially Tuna) but have never had Wahoo in it.

wahoo sushi is incredible- raw wahoo marinated in something good and grill for 15 seconds each side is always something that makes my mouth water

Thanks for the recipes… I’ll be experimenting this weekend.
One question, how long should the ceviche “cook”? The Poisson Cru is recommended for overnight… 5-7 hours for each dish?
