Knives

This year I’ve finally got a kitchen of my own and need a kitchen knife set. I cook a lot so I want some decent stuff but I need it on a college kids budget. Anyone have recommendations on brands/ sets I should look at?

Go to Walmart and but a set from China! You have years ahead of you, to buy knives! Worry about the big stuff first!:wink:

Decent knives that will do the job until you can afford better. Learn how to use the steel and you can keep your knives sharper longer.

I like the white handled kitchen knives you’ll find in lots of restaurants. I go to a restaurant supply store to buy my cooking tools. If it’s good enough for folks who use it all day every day, it should withstand the abuse I can dish out to it.

Go to Berlins or order some Dexter knives, 8" Chefs, a decent boning knife and a couple good paring knives and a bread slicer,Dexter are good starting knives. Get a good sharpening stone.

To avoid the “you don’t need no high-dollar knives” posts, I’ll refrain from suggesting which knives to buy but I will suggest buying a Work Sharp for sharpening whichever knives you buy. You can sharpen knives, scissors, axes, lawn mower blades…you name it…with this set up. This is the one I have but they offer other models…

Regardless of the quality of your knife, a dull one is worthless and dangerous.

I agree whole heartedly with bangstick on this. I’m the cook in my house and I used good, quality knives. I have a set of J. A. Henkels, but you don’t have to have super expensive knives…you do, however, need sharp knives. I have the same Worksharp sharpener as bangstick and its awesome. It’s super easy to get all of your knives shaving sharps in just a few minutes.

I use dexter Russell Sani safe commercial knives. You can get them at Berlins. I also found some on sale at Gander Mountain during the close out for as little as $8.99. The 6 inch boning knife is probably the best triggerfish knife on the market, and the 8 inch fillet knife is perfect for flounder. I have a couple of large breaking knives 10 inch scimitar and a 12 inch breaking knife that I use on large fish such as sword fish and sharks. You cannot get just one knife for all the fish.
For sharpening I use a chefs choice three stage sharpening machine, and cannot find anything that will beat it

Do you have the Chef’s Choice with the buffer as the third wheel? It’s the 120 model, I think. That is what I’m looking at for the kitchen. I use a Lansky or Smith’s guided system for my custom knives… and a strop.

Yes that’s the one. And I have put it through five years of a commercial market and it still works just fine

I use the Chefs Choice 120. So quick to sharpen and just run it across the back of your hand and it shaves you. Sometimes I even wash it before using it if people are around.
I have had my Friedr. Dick knives for so long you can’t see a brand, about 25+ years, so don’t discount quality.
But I get your college $ point. I’d start with the white handled Dexters to start. Check out Berlin’s used store next to the main store, you may find some ground down knives. Ask them, good people.

And never ever wash a good knife in a dishwasher. Ruins an edge faster than anything I know. I use a steel hone before and after every use but I like sellsfish’s recommendation. That man can clean a fish!
