I have a Sea Hunt and the bolts on all the hinges have jam nuts on the other side of them to prevent them from coming loose. Unfortunately some bolt have come loose where I see the only way to repair it is to cut into the fish box to gain access to the bolts. Then repair the fiberglass , another suggestions
Can you post up a picture of what you are referring to? I replaced some hinge bolts on mine but I was able to access everything and used 316 SS lock-nuts.
I’d start with a call to the factory and see what they suggest.
After being released, a lot of fish die, but a lot of them live also.
Maybe just add an inspection port so you can have access to the bolts and then be able to seal the access port to prevent water intrusion.
