So my question is not how to make it. Got that covered. My question is I am serving 30+ people and can’t make up my mind on how much potatoes, sausage, and corn to use. I got 30# of shrimp already. Just not sure if the pot will be big enough for one batch or have to split it in 2 or 3.
10-15 lbs of sausage and potatoes. 40 or so ears of corn, cut in half. Can’t answer about the pot. Don’t know how big it is.

I used to do a catering job occasionally. Figured 1/2 lb each of shrimp, sausage, and potatoes. No more than one full ear of corn per guest. And a few small onions of course. Once asked a friend what to do if more people show up. He said bring an extra can of red pepper!
