Dinner early because I start a stretch of 12hr night again tonight
“Roasted Salmon with carmalized sweet onions and fennel”
(Had never cooked fennel before but will definately have it again)
ingredients

Thinly slice fennel and sweet onion and slowly cook in large skillet with chopped and pressed garlic and olive oil until transparent and with just a hint of brown, stirring often. Aprox. 25 minutes. then stir in salt, ground pepper,lemon juice and small amount of fennel leaves from top of stalk. Continue to slowly cook.
Place salmon in lightly greased pan after sprinkling with small amount of salt/pepper/and fennel leaves and bake in 400 degree oven until just cooked through…aprox. 10 minutes ( I also did some flounder filets since Donie prefers that to Salmon…but he did try the salmon too)
Serve fish on top of onion and fennel mixture that has been spooned onto plate.
side dish Mushroom and Sage fettucini
cook fettucini according to package directions
saute small amount of finely minced sweet onion and 4 garlic cloves in 2 tablespoons of olive oil in skillet over medium/high heat until softened. Add sliced portabella mushroom and continue to cook over med/high heat until softened. Add in 1/2 cup dry wine and 1/2 cup chicken broth and cook until liquid is almost completely absorbed . stir in 1/2 cup heavy cream and 1 cup of water reserved from pasta. , 2 tsp salt , ground black pepper,and allow to cook/simmer aprox. 5 minutes. por into and toss with pasta,sprinkle with 1 tbs sage leaves and sprinkle with parmesan cheese.
Served with salad.

Actually…I only cook meals like this once a day…and not everyday…like today i had to be in at7p for my 12hr…so we ate early…and I love to cook…donnie feels like quite the quinia pig…groans when I tell him im trying something new…and i try to always have us eat before 6p

No weight implications here!! My wife is a nurse and a pretty darn good cook as well. In 20 years of marriage she’s only fixed 2 things I asked her not to fix again. Some of my favorites are dishes she learned in McClellanville while visiting my dad. On the other hand she can’t sew or iron worth a flip. She’s all of 5’1" tall and 105 lbs soaking wet and the only way she will get on a boat is with a cocktail in one hand and sunscreen in the other. She will let me fish and hunt pretty much all I want so I’m not complaining.
lol…Donnie wont touch a rutabega(sp) or liver and onions…so has now learned that when I ask him what he wants for dinner he had best say “it doesnt matter” more than twice or…well you know…Mcclellanville huh…that means we must be family

My wife doesn’t even bother to ask what we want. If she cooks it we will eat it. I weighed 165 when we got married 20 years ago and now I’m about to hit the big 5-oh and I struggle to keep under 200. She just doesn’t grasp the concept that sometimes we could just eat a sandwich. Donnie must suffer the way I do. We’ve had an earlier discussion about family in McClellanville. My dad was married to your aunt I think. (Judy)

Hey Mrs. Pen try this the next time you cook salmon. Mix mayo, mustard and capers with a little caper juice, salt and fresh cracked peppercorns to make a sauce and drizzle over the salmon after you plate it. Works for me.
