Mahi and wahoo

What’s the best rod reel setup to use for both

the short answer is ---- which ever rig that’s hooked up! Long before all the gold colored & black plastic lever drag reels the Penn 6/0 & 9/0 reels with the black sides were the workhorses of the ocean. Rods have gotten very fancy but back when we wanted a rod that was stiff enough to put some pressure on a heavy fish. The best thing I can tell you is to make sure you set up each rig to handle a big fish and respect the proper drag settings and check them with an accurate scale.
