quick and easy recipe for the summer…
what you will need:
3 or 4 boneless/skinless chicken breasts
1 tablespoon lime zest
1/2 teaspoon kosher salt
1 can pineapple slices drained
1/2 cup shredded coconut
1/2 cup sliced almonds
1&1/2 to 2 cups mango smoothie(small bottle usually in fruit/vegie section of grocery stores)
Wash and place chicken in baking dish( I butterflied mine)
Sprinkle with kosher salt.
Place pineapple rings on top and cover with smoothie mixture
( I lifted chicken slightly to get some under it also)
Sprinkle with lime zest/coconut and almonds
Cover loosely with foil and bake 20 minutes
Remove foil and bake additional 8-10 minutes
( at this point took 2 tablespoons cornstarch and mixed with 1/3 cup cold water and gently stirred into sauce to thickenas it cooked the last 10 minutes)**
served with jasmine or butter herb rice and salad
I told donnie the sauce is served "with " the chicken…so of course he put it “on” the rice:smiley:
