memorial day spread, whats yours looking like?

So just curious what every ones grilling today? any one got a nice spread going on the grill?

this is what i got cooking, as far as fish i just added a flounder and eel, as well as bacon and 2 pork butts and some garlic on the smoker for tonight (hickory). Paired with Grilled slices of Sweet potatoes and grilled sweet corn on the cob w/ the husk and ofc my steamed Jasmine rice.

also smoking some mullet for my minnow traps :slight_smile:

Nice spread Noob! My group is a lot smaller than yours. We did some chicken breast and squash. Strawberry ice cream finished us off.

Wow, please tell me how to prepare the eel to cook. Also, can you eat any of the eels you catch around Charleston, or just certain species?

i caught that eel in bushy park so yes you can eat the ones you catch, and it was quite good, even people that were scared to try it went back for seconds. they clean similar to a snake. you can actually skin them like a catfish. screw the head and slice around the head and pull it off with plyers but that’s to much work for me i clean it more like the video i linked. cut the head off but not all the way threw just enough to kill it slice it down the belly and it will lay open then you can pull the bones and guts out with a little bit of force. and bam its ready for the grill i like smoked eel but there tasty on the grill as well. smokes like any other fish temp should be about 200 for about 2/3 hrs and shes good. i use a bbq dry rub on the meat side the place it down and flip it after a little longer then a hr.
