I have a 2005 Mercury 60hp 2-stroke 3 cyl. outboard that cranks and runs fine at idle or low rpms but when I increase throttle and boat to plane it stalls and shuts off, then is very hard to crank, if it cranks at all. I have replaced all fuel filters, hoses, bulb and drained the carbs and sprayed carb cleaner. All this still had no effect, it still stalls. I’m at a loss here.
Oil injection? Might not be getting enough oil at the higher rpms and overheating.

You need to see if it is spark or fuel related. My guess is spark by the way you already covered most of your bases with your repairs so far.
Get it to cut out and act up. Take an old spark plug with you and unhook a wire. Plug in the spare and hold the metal shell against the cylinder head to ground against. Crank and see if you have good spark. It should be bright blue, not orange or yellow. If the spark is not there or is weak, you have to see what’s going on with your ignition system.
If the spark is good, then time to see what’s going on with your fuel delivery.
You need to do this so you are not chasing your tail.

Thanks MattR, I’ll start there.
To me it really sounds like it’s overheating. Hence the hard time you are having to restart after it dies. When it finally cools down enough does it start easily? If it does that’s a big clue.
If it’s not getting enough oil at higher rpms it will overheat. If it’s not oil injection, I would suspect the water pump. A motor will quickly overheat at higher rpms if the impeller is worn out.
When is the last time the water pump impeller was replaced? If it’s been a couple years you probably should replace it just to be safe. Sometimes it’s real hard to determine if a water pump has a problem on a small motor hooked up to a hose flusher.

2005 Mercury 60hp Number 1, 2, & 3 cylinders 120, 50, & 30 compression. Motor fried. Always had oil in reservoir and never run hot, that I know of, always had a strong water stream from back of motor, water pump impeller two years old. Any idea of rebuild cost?
have you tried to decarb the engine? At 30 psi, it probably won’t help, but it may be worth a try, especially if you don’t have or know any reason for it to fail. If you need to have the power head rebuilt, look up Thomas Tyler in Scranton, SC(near Florence), those motors are his specialty
Somehow water got into the oil reservoir, it was injecting water and oil into the cylinders.
