Does anybody eat the bigger ones? My dad was down in Pensacola on a business trip and was talking about fishing, my dad said he uses them as bait and they said it was a bad idea to waste good fish and that they are very tasty. Are they good eating or what?
I’m so salt life I sued google earth for giving away all of my fishing spot’s.
I like em… 16+ inches and I keep em. Pretty white and light meat.

Scale, gut and split em, Brine overnight in salt water, dry em, smoked at 240 degrees for 3 hrs or lower/slower… use oak or hickory sawdust in a foil pack with holes in it, replace pack every hour.
YUM YUM!
Don’t freeze them, use them fresh.

I’ve fried the river mullet from the Cooper system before. Just fillet and fry as normal.
Never freeze them, as said above.
