My First Asian.... Inspired Dolphin

Here is a complete meal I kind of randomly made for dinner last night that happened turn out excellent, so I thought I’d share. It is very simple ingredients with a few small tweaks, to make it different.

Grilled marinated fresh Dolphin, with Ginger Rice, and Snow Peas with Toasted Almonds.

Marinade, in descending order of volume, I didn’t really measure anything: Orangejuice, EV Olive Oil, Soy Sauce, Honey, Grated Fresh Ginger, Minced Garlic, Pinch or 2 Crushed Red Pepper. I’d probably add some chopped green onions if I had them.

Marinated for about 1.5 or 2 hours before throwing on the Weber as hot as it would get for a couple minutes per side.

Rice: Fresh ginger is absolutely necessary for this. Put your rice and water in the pot 2:1 (2 cup water, 1 cup rice) or however much you want to make. Then with the fine end of a grater, grate about a 1.5 inch piece of peeled fresh ginger over the pot, so the all the juice and pulp of the ginger ends up in your rice. Add a little butter and salt, bring to a boil, cover and simmer until rice is done.

Snow Peas: Melt a tablespoon or 2 of butter in a skillet over med. heat. Add sliced or slivered Almonds to butter and toss until the just begin to brown… Then scoup out half the almonds and toss in your pot of rice. To the rest of the almonds in the pan, throw in the snow peas, lightly season with salt and fresh cracked pepper, and sautee just a couple minutes. You want them to still be very crisp.

Last, chop a bit of fresh parsley to add to the rice with almonds and mix. This is the second time I’d made the Ginger infused Rice and it is excellent, the fresh parsley actually adds a lot as well… I know Soy can be overwhelming when marinating fish, so use sparingly. The combination of toasted almonds and snow peas go very well together. Fresh grilled Dolphin, well its always going to be good, but there were hints of the marinade without being overwhelming.
