Tried something new tonight that worked out great. No pics but thought it was worth sharing…
2 fat trigger filets
Season with salt, pepper, garlic, parsley
Then coat with some GOOD quality Dijon mustard. I used some from my friends restaurant (Fast and French)
Dust with flour
Pan fry in a mix of olive oil and butter
Lemon juice to finish
DAGGUM it was good. The mustard flour mix created a delicious crust

Then you need to get some venison cube steak or back strap and try it!

I’ve dipped catfish fillets in plain yellow mustard before flouring them before. It’s very good.
