Tried something new tonight that worked out great. No pics but thought it was worth sharing…
2 fat trigger filets
Season with salt, pepper, garlic, parsley
Then coat with some GOOD quality Dijon mustard. I used some from my friends restaurant (Fast and French)
Dust with flour
Pan fry in a mix of olive oil and butter
Lemon juice to finish
DAGGUM it was good. The mustard flour mix created a delicious crust
