Iv’e seen dual consoles and center console with bimini tops offshore. I would prefer the hard top. Never to many things to hold on to out there

Bozo, I do not have a top. I run 16’ outriggers mounted on the gunwales.

the Pursuit 26 ft DC at the january boat show had a hardtop, outriggers, full Eisenglass for snotty weather, step down head, decent fish boxes, all the toys. I suggest you get one and I’ll ride along. You can store it at my house if need be.

Had a 25 World Cat DC, loved the layout.
Things I liked, HUGE Cockpit for the size bote, your Bimini or hardtop will be gunnel to gunnel instead of a ttop providing much more shade.
Our Family lake bote, a 20 Key West, DC has also been very enjoyable and versatile, have used it all over S fla and keys and in good weather does well.
i learned how to fish on a 20’ grady dual console with outriggers in rod holders. Total cluster mess fishing on boat that small but a i do recall trolling down a weedline with agressor on other side and pulling dolphin into boat left and right while they sat watching with all rods dead…so i guess you can catch em just fine on a dual console
My first “real” boat was a 1986 Grady White Tournament 19 (in 1990). I think it held 42 gallons. We’d head off every weekend w/ (5) 5 gallon Jerry Jugs of gas and pour it in offshore. No outriggers for a while then added gunnel mounted outriggers. Went to the Ledge often. Caught lots of fish.
