I prefer the sit on top. Easy in and out on flats and seems to me its easier to get the stuff i need. Then again I have never had a sit-in. Just my 2cents.
I have a sit in heritage featherlite, honestly the worst fishing kayak I have ever owned. I’m getting a ride or ultimate in the near future.

I’d say paddle both if you can before you decide.
Advantages of Sit ins are mainly hull shape and speed/paddling efficiency. The disadvantages are not as easy in / out and more difficult self rescue.
I fish mostly SOT, but I’ve logged hundreds (or thousands) or hours in sit ins.
You need to think about how much stuff you plan to carry, where you’re going to fish, and how far you’ll be paddling. I really enjoyed fishing from a 15 foot Dagger Edisto a couple of years ago. It was a very fast boat and with some simple rigging it made a nice fishing platform.

Before you make your decision on a Sit on top kayak It would be to your benefit to paddle a few different manufactures / models first
Todays fishing kayaks models offer good quality + very different features / benefits

I paddled sinks for some years before I decided to try fishing out of one. I had some immediate success but really did find it awkward. I didn’t know much about sots and just thought of them as a bear to paddle but I lucked into a sot that paddled rather well and it’s much nicer to fish out of than a sink imo.
The lesson for me is that some sots paddle really nicely (usually longer, narrower boats) so you can have a good compromise between sot convenience and sink paddle-ability. I recently bought an older Tarpon 160 and it is the nicest paddling sot I’ve ever paddled. Can’t stand up in it though… (or at least I can’t) and that’s another part of the compromise.
As DLWhite said… try different boats and see what works for your style but the great majority of kayak fisherpersons choose sots.
DlWhite’s statement is very true, I paddle a few different ones before I bought one from him, and I couldn’t be happier with it. I have a few injuries and I still can stand In mine. Have had one or two people say mine is not that fast but they also don’t fish, and I do. Plus I’ve even thrown my cast net from my SOT, dont know if i would want to try it from a sit in. Having fished out of SINKs and SOTs, I personally feel like SOTs are a lot more fishing friendly.

I spend the vast majority of my time in the Tarpon 160. AMAZING fishing kayak. It’s my go to boat for covering distance or paddling in the wind.
