Oyster Question

Has any of you guys ever froze oysters in the shell and if so how long will they keep! Got a big party coming in nov. and wanted to get started soon but dont want to waste any from going bad!

Not sure if i’d want to freeze them in thier own shell and then roast them. I’ve frozen them on the half shell while fresh for 2 days by stacking them with plastic between them and then served them raw on the half shell and they were pretty good still(not as good as fresh tho. One can also bake the frozen ones on half shell with different toppings. Shucking them and freezing them in plastic containers in thier own liquor(juice) works really good.

Thanks for the info! Our annaul party is Nov. 21 and I just wanted to start early! Do you by chance know how long they will last in a walk in cooler? I am not sure but they harvest them then process them and ship them all over the country to markets to be sold so I am guessing 2 to 3 weeks but i want to be sure they are to good of a resource to chance them spoiling so any info would be a help Thanks Tony!

Can’t be 100% sure on just how long they would last refigereated but I’m guessing 2-3 weeks is out of the question. I have kept them in refrig for max 2 or 3 days. I used to keep some for longer then that by putting them in burlap sack or similar and hanging the bag off back of boat in the water at night then taking them out of water for the day, then back in at night, sort of mimicking the hi and lo tide to a point. Not too practical unless on the water tho, possesion limits might come into play then as well. Maybe round up a few friends with boats to go out a day or 2 or 3 before party? Might try e-mailing Sellsfish on here he knows a lot about oysters.

Im pretty sure oysters will usually keep 5 days or so in a walk in cooler if kept and handled properly…if they start opening you can usually see it and if you pick the bag up and sit it down can often here the “dead ones” in there,holow clanking sound to me…keep a close eye on them…definately would not freeze them in their shells…

probaly should just buy some the day of the party.

Swamp seven seas sells(try to say that 5 times fast) oysters in a burlap sack for around $25 but you gotta clean them. I’d either buy them there or ask them on some tips.
