“Pan roasting” is a mix of saute and roasting. I get the pan really hot, add a little oil and then the fish/ vegetable/ whatever… Tonight it was flounder, zucchini and cous cous.

Quarter the zucchini and trim the ends. Season the flat side with salt and pepper. Put flat side down in the hot pan and leave over high flame for about 2 minutes. Then put in 400 degree oven for about 7 minutes.

I treat the flounder the same way but cook for about 5 minutes in the oven. Notice I never flip any of it until it is done.

Gently lift and flip the fish out of the pan (the hardest part). Same with the zucchini. This works with all kinds of stuff from mushrooms to chicken breast. Oven time will vary based on the size of what you are cooking.
